2017 Willoughby Rd Colbinabbin Nebbiolo
Traditional Nebbiolo - Seductive perfume, bright fruit and long, fine tannin. Genuinely wonderful drinking and perfect with a rustic plate of food.
From the Older ‘C Block at Willoughby Bridge planted by Steve Travers is 1998. Of all the vines I work with this block is the furthest down the hill in Colbinabbin, the soil slightly more loamy. The vines are CVT230 clone.
There was about 50% of the must that was picked very early, whole bunch pressed and stored in a very cold place for several weeks. When the remaining fruit was phenolically ripe it was picked and destemmed - always thoroughly sorted - and placed in a closed top stainless fermenter.
I then proceeded to saignee about 50% of this juice, to be replaced by the previously mentioned early pick.
The idea was that I would be giving the very fresh and acidic juice some very ripe and delicious skins. Pressed after 24 days of regular pump overs.
Elevarge was 12 months in stainless followed but 12 month in old puncheon.
